The Central Hotel.

We have chosen to visit Central Hotel located in Beaconsfield. We believe that pub will have many hidden

mathematical

in place beyond merely the tills. Slide3

Interview with publican - Frank

Deegan

Do you consider the pub a mathematical work environment

?

“Not

particularly, I don’t test people on their

timetables

in an interview or anything but like in any business there is numbers

.” Slide4
Slide5

What kind of maths

do you think is in the pub

?

Off the top of my head the most obvious is the tills, banking money, paying wages and maybe adding up a stock take. Oh and probably putting drinks at a price where I make profit.

Car Park calculations cont.

Area of total car park:

18.3 + 6.1 + 6.1= 30.5m

2.8 x 7= 19.6m

19.6 + 0.9 = 20.5m

Extra car spot: 6.1 x 2.8 = 17.08

30.5 x 20.5 = 625.25m²

625.25 + 17.08= 642.33m

²

Perimeter of car park:

30.5 x 2 = 61m

20.5 x 2 = 41m

61 + 41 = 102m

Extra car spot: 2.8 + 2.8 = 5.6

6.1 + 6.1 = 12.2 +5.6 = 17.8

= 102 + 17.8= 119.8m

Area of one car spot:

6.1 x 2.8 = 17.08Area of all car spots:17.08 x 15 = 256.2m²

Q:Do

you think that from the photo you are utilizing your cool room space in your bottle

shop cool room? Bare in mind there are some empty shelving.  A: “There obviously is more room that can be utilized but it is also a walk in

coolroom

and not only there for storage so there is a need for a walk way. Having said that the walk way is quite large and with the empty

shelving.”

Total area of shelving space:

1 x 7= 7

7 x 2= 14

1 x 26= 26

26-1.5= 24.5

14+26+24.5= 64.5m²

Area of Storage space:

0.5 x 24= 12m²

Do you factor in things such as wastage, and amount of ice used and over pours

etc

We have a certain amount of beer and spirits that we factor in for wastage and over pour. That is part of the beer prices as well as the alcohol tax, wages, overheads etc. ice doesn’t cost me anything cause I have my own ice machine? Is that what you are referring to?

Q:You

mentioned making drinks prices where you would make a profit, it that something that you calculate or an educated guess?

A:“At the risk of sounding like a bad businessman it is an educated guess, but after 35 years of owning pubs it is a fairly educated guess
