3. Introduction β-glucans are polysaccharides of D-glucose monomers linked by β-glycosidic bonds. Composed of about 20-30 glucose units with side chains.They are derived from the cell wall of - baker’s yeast, fungi, bacteria, mushrooms, oats, bran, wheat, and barley.Nowdays, the popularity of β-glucans as food additive and a disease-modifying agent is increasing.β-glucans is one form of soluble dietary fiber that’s strongly linked to improving cholesterol levels and boosting heart health.

Occurrence of beta-glucansPredominantly found in the aleurone and sub-aleurone cell walls .β-glucans content varies with endosperm development and is regulated by (1-3, 1-4) β-glucan endohydrolase .β-glucans are naturally occuring polysaccharides found in the cell walls of plants, cereals, grains, algae, yeast, bacteria, and fungi.Cell wall of baker’s yeast, that Saccharomyces cerevisiae is most abundant in β- glucans.
