What is wine? Wine is composed of: - water - alcohol (ABV as %) - 2% esthers, ethanol, tannin, sulphites, phenols, glyerol, acids, 60 trace elements, etc Basically fermented grape juice 10,000 worldwide grape varieties (vinis vinifera – literally wine grape or noble grape)The term “wine” can only be applied to alcoholic drink made from 100% grapes. If there is a suffix wine has a quasi status e.g. Blackberry wine  

And a cool climate? Warm climate produces robust wines with high alcoholCool Climate produces subtle flavours with low alcohol. UK, N. Europe & Canada produce Cool Climate WinesUK wine region has doubled over the past 7 years, 2,000 hectares planted.Sparkling wine production up by 150% over 5 years

UK Wine or British Wine Prefix “British” circumvented regulation about wine being made from 100% grapes in the post war period“British wine” is made from international fruit concentrate, and some companies have a voluntary code to include 30% grape juice. The British part is the water diluting the concentrate. States “Made wine” on the label.

What about champagne? The English invented method champenoise, NOT Dom Pérignon! Christopher Merrett to Royal Society 1662. Our glass bottles were of better/thicker quality than the French.Cheap sparkling wine injects CO2 gas into tanks and bottles it. Coarser bubbles. Short time on yeast. Prosecco is a current example. Supermarket sales of cheap bubbly very high at moment (Aldi & Lidl)
