1 Tbs. Garlic SaltDirections:Mix black beans, sweet corn, and mangoes in a large bowl; add lime juice and stir. Sprinkle cilantro over the mango mixture; toss to combine. Let rest in fridge.

Nutrition Solutions Cooking DemoMexican Cauliflower “Rice”Ingredients: 4 cups Cauliflower, riced1 tsp Olive oil½ ea. Yellow onion, minced
1 ea. Jalapeno, de-seed and mince2 ea. Garlic, minced2 tbls Tomato paste½ tsp Cumin½ tsp Paprika, smoked¼ tsp Cayenne
1 tsp Salt
tt Pepper
Garnish Cilantro, chopped
Directions:
Heat oil in a large skillet over medium-high heat. When hot add the onions, tomatoes, and jalapenos and sauté until tender, about 2-3 min. Add the garlic and cauliflower; sauté until the cauliflower is just tender, about 2 min.Add tomato paste, cumin, paprika, cayenne, salt and pepper. Stir to evenly coat the dish and cook for 1 min. Heat oil in a large skillet on medium-high. Cook and stir onions till they begin to soften, add garlic and continue to cook for 2 min. Stir in tempeh and brown for about 5 min.Pour in broth and reduce the heat to low. Add remining ingredients and cook till most of the liquid has reduced.
Plate up with your favorite fillings. Enjoy
