Cream – by-product of milk production; produced by separating the fat globules from whole milk.
Sour cream – left to become sour or soured with bacterium.
Yoghurt – cultures are added to milk which convert the sugar to lactic acid, which coagulates the protein and creates the thick consistency.

Milk should be stored in the refrigerator at 4C. The milk should remain in its plastic container or carton to prevent it absorbing

way to extend shelf life of milk
Breaking down the globules of fat into minute particles so the cream does not rise to the surface of the milk.
The milk is forced through a very fine nozzle at a high pressure.

pasteurised

A way of extending the shelf life of milk
Destroys all pathogenic, or disease causing bacteria.
Method: heat milk to 72C for 15sec and then cool it rapidly to 4C.
