the general population
(or 580 million people worldwide)
-IDDSI.org The International Dysphagia Diet Standardization Initiative (IDDSI) new global initiative to standardize terminology and definitions to describe texture modified foods and thickened liquids used for individuals with dysphagia of all ages, in all care settings, and all cultures. The IDDSI framework consists of 8 levels (0-7). Levels are identified by numbers, text labels and color codes.
-IDDSI.org Together in 2017, the Academy of Nutrition and Dietetics and ASHA announced their support of IDDSI
-ASHA.org and Eatright.org Founded in 2013 with a goal to establish

NDD & IDDSI Comparison Though the levels do not match up exactly, as the NDD was not standardized, they are similar in practice. What you saw on a NDD defined diet will look a lot like the corresponding IDDSI diet in the chart below.
The amount remaining in a 10 ml syringe after 10 seconds determines the level
0-1 ml : Level 0 Thin
1-4 ml: Level 1 Slightly Thick
4-8 ml: Level 2 Mildly Thick
8-10 ml: Level 3 Moderately thick
Does not release: Level 4, need to use the solid tests

Level 4: Doesn’t drip through fork prongs & holds its shape, easily slides off a spoon when tilted
Level 5: Lumps are ≤4mm width & 15mm length, can fall between fork prongs & holds its shape, easily slides off a spoon when tilted
Level 6: Pieces ≤ 15mm x 15mm, with pressure pieces squash & don’t return to original shape & side of fork can separate into smaller pieces
Level 7: same pressure and separation requirements as 6, no size requirements. Not implementing with current roll out. Solids
