Create all necessary Prep lists & How-Tos for ALL classes to Execute to your standards & create &/or gather all recipes Criteria ~ Ranking & Grades Rankings will be based on Customer Feedback Forms Overall Sale Totals Grades will be based on The entire process – start to finish Execution of each component Profitability Concept Theme & Name Determine what type of restaurant you want to open The possibilities are endless You can do whatever (if any) market research you want to do The menu & theme must fit within the space of the cafe & utilize the equipment available No food & equipment (depending - small wares ok with approval) can be brought in for this Décor can be made & or brought in The ambiance is just as much apart of your overall theme & plays apart in the feedback ranking primarily – not as much in the overall grade. Menu Your menu must consist of: 2 Starters/Snacks 2 Salads Sandwich A al carte Entrée 2 Desserts Beverage/Espresso Cart & Smoothie(s) FND item(s) Adjustments can be made based on theme, with approval (for example, a taco could replace the sandwich) Nutritional guidelines will remain & must be followed. This is the “minimum requirement” “The menu must fit within the space of the cafe & utilize the equipment available. No food can be brought in for this (some equipment & small wares ok with approval)” “Shopping Requisitions must be complete - if you don’t order it, you don’t get it.” Food Cost Menu You must food cost the main items of your menu using Costco & Safeway’s online in formation. Menu items will be priced appropriately based on our “normal cafe costs” & food cost information. While your ranking is based on sales, part of your grade is based on profitability – did you make money or loose it?
